Wine-making

Period of harvest:  The third ten days of September.
Once de-stemmed and treated the grape clusters go through a cold maceration (at 10°C) for five days in order to optimize the color as well as the typical Cesanese grapes' aroma extraction. Following this phase, the grape is pressed and the wine must undergoes clarification by static decantation. At this point the must is ready for fermentation in tanks (Charmat Method) at low temperature.

Ageing

Wine to be drank young, to better appreciate its extraordinary freshness. After just a few days from bottling, thanks to some special adopted techniques, the wine is already ready for drinking.

Descriptions

Colour:  The Cesanese Rubens is a sparkling wine with ruby-red tones purplish highlighted. A thick froth soon gives way to a fine and lingering perlage.
Perfume:  The scent is highly captivating thanks to a natural effervescence that amplify sweet sensations clearly recalling roses and fruits such as blueberry and raspberry.
Flavour:  In the mouth the fizz tight weave gives fullness and freshness, enhancing the right balance between sweetness and acidity. The taste is lingering and the retro-nasal sensations recall black cherry jams.

Combinations

Likewise all sparkling wines, it is very palatable between meals and excellent with desserts.
