Wine-making

Period of harvest:  middle of October
Obtained with destemming and fermentation of the sprayed pileus skins at controlled temperatures, with frequent pumpovers for about one mounth. Follows the storage inside steel tanks for four months during which period malolactic fermentation can take place. Aged in barriques for approximately 14 months. Bottle aging, in thermo-conditioned rooms, for 6 months.

Descriptions

Colour:  ruby red, deeply intence.
Perfume:  refined, complex with violet and vanilla nuance, black barries and tobacco.
Flavour:  full-bodied, rich, smooth with sweet tannins, lasting, lingering aftertaste. Good end.

Combinations

It nicely matches with spicy dishes, roasts and aged cheese.
